The ancestral method is the oldest method for producing sparkling wines, predating the classic method (Champagne). Already in the Middle Ages, some regions of France – like Limoux in Languedoc – were producing naturally sparkling wines thanks to fermentation resuming in spring. The term “Pét-Nat” is more modern and was popularized in the 1990s-2000s by natural wine movements in France, particularly in the Loire. From there, it spread internationally, becoming synonymous with artisanal, minimally interventionist, fresh, fruity, and spontaneous wines.
