On the nose, it releases notes of fresh fruit, citrus, and white flowers, with a slight hint of toasted bread and yeast. In the mouth, it is lively, fresh, and savory, with a fine and natural bubble that accompanies a mineral finish. Unfiltered, it is a wine

A bit of history

The ancestral method is the oldest method for producing sparkling wines, predating the classic method (Champagne). Already in the Middle Ages, some regions of France – like Limoux in Languedoc – were producing naturally sparkling wines thanks to fermentation resuming in spring. The term “Pét-Nat” is more modern and was popularized in the 1990s-2000s by natural wine movements in France, particularly in the Loire. From there, it spread internationally, becoming synonymous with artisanal, minimally interventionist, fresh, fruity, and spontaneous wines. Today, Pét-Nat is produced worldwide, with various grapes and styles.
